Neiman Marcus Dip


Do you have any big plans this weekend? We are planning on taking the kids fishing at a local lake. My little guy caught his first fish recently so he's hooked on fishing. My husband and his friend decided to take 3 little guys hiking 4.5 miles up to a lake up in the mountains to fish. I thought it was pretty ambitious, but they all had a wonderful time. The funniest part is that my kiddo got mad at a guy fishing next to him because he was "stealing" all the fish and that's why they weren't catching any. 

My parents are also in town so we'll probably have a BBQ to welcome him. When thinking about the menu, I got hung up on the appetizer. The main course was easy - these blue cheese and bacon burgers. The side dish - baked beans. Dessert - ice cream. Appetizer - ???

I have lots of appetizers that I love, but I wanted to try something new. As I was thinking about this, I remembered a dip that we had at a friend's house last year. It had bacon, slivered almonds, green onions, and cheese. I had no idea what it was called, but it was delicious. After numerous internet searches, I came across the Neiman Marcus Dip. (Don't ask me why it is called that.)

There were numerous variations out there, but the ingredients stayed the same. So I took the ingredient list and made up my own version. I cut the mayo with half Greek yogurt (we aren't huge mayo fans), then I loaded it with bacon (because who doesn't LOVE bacon?), green onions, slivered almonds (love the crunch), and cheese. Some recipes had double the amount of cheese and half the amount of almonds so feel free to add more or mix up the ratios of ingredients to suit your preference. You really can't go wrong! 

Neiman Marcus Dip
Servings: 4-6

1/4 cup mayonnaise (regular or light)
1/4 cup plain Greek yogurt (or sour cream)
6 slices center-cut bacon, cooked and crumbled
2 green onions, thinly sliced
1/4 cup slivered almonds
1/2 cup shredded sharp cheddar cheese
Salt and pepper
Crackers for serving (such as Ritz)
Extra cheese and sliced green onions for topping (optional)

Mix all of the ingredients together in a medium bowl. Season with salt and pepper to taste. Top with extra cheese and green onions for garnish. Refrigerate until ready to serve. Serve with crackers.

(Gluten-free option: Serve with gluten-free crackers such as Glutino Rounds, or tortilla chips.)
