Healthy Chicken Salad with Greek Yogurt


I have been craving chicken salad like crazy lately and I finally got around to making it today. I ate a serving (I had to taste test you know) and then saved the rest for lunches this week. Well...my husband had other plans. You know what he did when he got home?! He ate the rest (well, almost...he left me about a tablespoon)!! 

I guess I will have to make a double or triple batch next time. Or maybe I'll just make it with mayo. He won't touch mayo with a ten foot pole. I don't have a problem with it so maybe that's the way to go. I guess this chicken salad was just too good, and because it was healthy he decided it was okay to eat the whole thing. 

You know what his response was to my ranting? "You need to make a man-sized meal!" Whatever. I have two words for you - portion control.

I guess I can't really blame him. This chicken salad is full of grapes, apples, walnuts, celery, and red onion, all tossed together with Greek yogurt and a splash of lemon juice. Perfectly light and delicious. Just make sure you make enough...

Healthy Chicken Salad with Greek Yogurt
Servings: 3-4

2 cups cooked chicken breast, cubed or shredded (about 1 rotisserie chicken)
1/2 cup celery, chopped
1/2 cup apple, chopped
1/2 cup grapes, halved
1/4 cup red onion, finely chopped
1/2 cup walnuts, chopped
7 oz. container plain Greek Yogurt (~3/4 cup)
Squeeze of fresh lemon juice
Salt and pepper
Rolls, tortilla wraps, or bed of lettuce for serving (optional)

In a large bowl, mix the chicken, celery, apple, grapes, red onion, and walnuts together. Add the Greek yogurt and mix well. Squeeze a little fresh lemon over the top (to taste). Mix well. Season with salt and pepper to taste.

(Gluten-free/low-carb option: Eat as is, on a bed of lettuce, in a lettuce wrap, or on an avocado.)

  2. I hope you enjoy it! This is my new favorite lunch. I love that it is made with Greek yogurt so I can eat it everyday without feeling guilty. :)
