Cranberry Orange Chicken Salad with Greek Yogurt


GOOD idea - Eat this healthy chicken salad for lunch. 

BAD idea - Eat an entire box of mac and cheese by yourself for lunch. Yes, the orange stuff out of a box. 

Tomorrow, I am going back to eating healthy. At least for lunch.

So I will be making this chicken salad again. I can't get enough of it. Are you sick of chicken salad yet? I'm sorry, I know I just posted this one last week, but I'm totally addicted. I love that it has protein, veggies, fruit, and nuts all in one. And no guilt since it is made with Greek yogurt. Much healthier than a box of mac and cheese.

This one is made with tart cranberries, sweet oranges, and slivered almonds. Wrap it up in a tortilla or serve it in a lettuce cup, and you have a delicious, light lunch!  

Cranberry Orange Chicken Salad with Greek Yogurt
Servings: 3-4

2 cups cooked chicken breast, shredded or cubed (about 1 rotisserie chicken)
1/2 cup celery, chopped
1/2 cup dried cranberries
1/2 cup fresh mandarin or clementine orange segments 
1/4 cup slivered almonds
1/4 cup green onion, thinly sliced
7 oz. container plain Greek yogurt (~3/4 cup)
Squeeze of fresh lemon juice
Salt and pepper
Rolls, tortilla wraps, or bed of lettuce for serving (optional)

In a large bowl, mix the chicken, celery, cranberries, oranges, green onion, and almonds together. Add the Greek yogurt and mix well. Squeeze a little fresh lemon over the top (to taste). Mix well. Season with salt and pepper to taste.

(Gluten-free/low-carb option: Eat as is, on a bed of lettuce, in a lettuce wrap, or on an avocado.)
