St. Patrick's Day Cookies

Happy St. Patrick's Day!! Are you doing anything special? I wish I could say that I'll be heading out to the pubs later to sip on some cold, frothy Guinness, but let's be real...I'll be at home getting crafty with the kids. I might even get crazy and throw some corned beef and cabbage in the slow-cooker. I can't forget the good ol' days though when I used to ski, yes ski, to the local pub on St. Patrick's Day and listen to an Irish band play. Just imagine what it was like trying to ski back to the condo after a few whiskey shots and pints of Guinness. ;)

If you are like me and looking for something fun to do with the kids, why not make some St. Patrick's Day desserts? You can keep it simple by making loft-house style sugar cookies, and having the kids decorate them with green frosting and sprinkles. Or you can have them help make Mint Chocolate Puppy Chow (my kids had a great time mixing and shaking). Or...

You can have fun making this St. Patrick's Day sugar cookie platter. The leprechauns took some time but they are oh so cute! Head on over to the amazing Sweet Sugarbelle's site for the tutorial. Because I didn't feel like mixing a lot of colors, I kept the other cookies simple. I used my favorite lemon-vanilla sugar cookie recipe and royal icing.
