Red Potato Salad with Vinaigrette

I love all kinds of potato salad...red potato, white potato, with mayonnaise, with vinaigrette... it really doesn't matter to me. But since my husband hates mayo, I needed to come up with a potato salad that he would love too. This salad is also perfect for backyard BBQ parties in the summer when you don't want a mayo salad sitting out in the sun. I like the color that the red potatoes add, but you could use whatever potatoes you like. Also, feel free to mix up the veggies depending on what is in season. I went heavy on the peppers and cucumber, but I also think tomatoes and celery would be great. 

Red Potato Salad with Vinaigrette
Servings: 6 to 8

1 tsp. dijon mustard
1/4 cup seasoned rice wine vinegar
1/4 cup extra-virgin olive oil or canola oil
1/2 tsp. kosher salt
1/4 tsp. pepper

2 lbs. red potatoes, cubed
1/2 red bell pepper, chopped
1/2 orange or yellow bell pepper, chopped
1/2 english cucumber, chopped
3 green onions, chopped

Place the potatoes in a large pot and cover with cold water. Bring to a boil, add 1/2 tsp. kosher salt, and simmer until the potatoes are fork tender. Drain and return the potatoes to the hot pot to evaporate excess water.

In the bottom of a large bowl, whisk the dijon, vinegar, oil, salt, and pepper together until well combined. Add the warm potatoes, peppers, cucumber, and green onions; toss to coat. Refrigerate until ready to serve. Toss again before serving and season with additional salt and pepper to taste.
