Chocolate Chip Cookie Dough Dip

Are you ready for the big game on Sunday? I absolutely love football, but I just can't bring myself to get excited about this game. The one thing I can get excited about though is the food. I have lots of fantastic savory dips and appetizers posted that would be perfect for the game, so I thought I would surprise you with a sweet dip. Every party needs something sweet too, and you really can't go wrong with chocolate chip cookie dough. 

This dip was very easy to make and tastes very similar to cookie dough. You can use animal crackers, graham crackers, or Nilla wafers for dipping. I used mascarpone cheese because it is creamier and sweeter than cream cheese, but you could use cream cheese in a pinch. It will taste more cheesecake-like though, and you might need to increase the amount of confectioners' sugar. 

Chocolate Chip Cookie Dough Dip

1 stick unsalted butter
1/3 cup packed light brown sugar
1 tsp. vanilla extract
8 oz. mascarpone cheese, at room temperature
1/2 cup confectioners' sugar
Pinch of salt
3/4 cup semisweet mini chocolate chips

In a small saucepan, melt the butter and brown sugar together over medium heat, whisking continuously until the sugar dissolves. Remove from heat, stir in the vanilla, and allow to cool. 

In a medium bowl, beat the mascarpone and confectioners' sugar together for 60 seconds. Add the salt and cooled butter mixture, and beat for another 60 seconds. Fold in the chocolate chips. Top with additional chocolate chips if desired. Cover and refrigerate until ready to serve. Leave at room temperature 15 minutes before serving to soften.
