It's Friday and you know what that means...pizza! After seeing this recipe on numerous food blogs, I knew that I had to try it. Individual dough balls stuffed with pepperoni and fresh mozzarella...genius! We went nuts over these and almost finished an entire dish between the two of us. I think kids would absolutely love these so be sure to make a double batch if you want any for yourself. I also think these would be a great party appetizer!
Servings: 20-24 bites
1/2 batch pizza dough (enough for 1 pizza)
4 oz. fresh mozzarella, cubed (20-24 pieces)
Extra-virgin olive oil
Italian seasoning for topping
Freshly grated parmesan for topping
Pizza sauce for dipping
Preheat the oven to 400°. Grease a 9-inch pie plate or cake pan. To prepare the bites, tear off a walnut size piece of dough. Place a cube of mozzarella and 1-2 pepperoni slices in the center. Wrap the dough around the mozzarella and pepperoni and pinch the seams closed. Place seam-side down on the prepared baking dish. Repeat with the remaining pieces of dough.
Lightly brush the tops of the dough balls with olive oil. Sprinkle Italian seasoning and parmesan on top. Bake for 20 minutes, or until the tops are golden brown. Let cool 5 minutes before serving. Serve warm with pizza sauce on the side for dipping.
