Baked Kale Chips


I was reading an article this morning on the predicted 2012 food trends. Among the trends were waffles, french fries, and kale chips. Kale chips, seriously?? I had to google this and to my surprise, I think I'm the only one who missed the memo on kale chips. Well, in case you missed the memo too, here's how you make them. They are super easy to make and cheap! I bought a huge bunch for $1.28. And let me tell you, these are surprisingly good. 

Kale Chips

1 large bunch of kale
Extra-virgin olive oil
Sea salt or kosher salt

Preheat the oven to 300°. Thoroughly wash and dry the kale. Using a knife or kitchen shears, remove the tough stems and center ribs from the kale. Chop the leaves into bite size pieces. 

Line two baking sheets with parchment paper (for easier clean-up). Place the kale on the baking sheets and lightly drizzle with olive oil. Gently toss to coat. Spread the kale in an even layer and sprinkle salt over the top. 

Bake for 20 minutes or until crisp. Sprinkle with additional salt to taste.
