Is your house full of tempting Halloween treats like mine is? I haven't bought our Halloween candy yet because I knew I wouldn't be able to resist, but we have had our share of Halloween sugar cookies and cupcakes and there is more to come. I just can't help myself. Therefore, it is great to have a healthy recipe like this one to make me feel a little less guilty about eating another cupcake. Full of protein and light on fat, this tuna salad is great served as a sandwich or placed over greens. Tuna salad has always been a favorite in my family and my mom came up with this lighter, and I think tastier, version.
Light Tuna Salad
2 - 5 oz. cans chunk light tuna, drained
2 tbsp. plain yogurt or Greek yogurt
2 tbsp. light mayonnaise
2 tbsp. dill pickle relish
2 tbsp. red onion, finely chopped
1 celery stalk, finely chopped
Juice from 1/2 of a lemon
2 tsp. fresh flat-leaf (Italian) parsley, chopped
In a medium bowl, add the tuna and flake with a fork. Stir in the remaining ingredients. Refrigerate until ready to serve.
