Everyone needs to have a good guacamole recipe. This one is from my husband's co-worker. A perfect balance of avocado, tomato, jalapeño, cilantro, onion, and lime. We chose to leave ours chunky but you could also puree it if you like a smoother texture. Just make sure your avocados are nice and ripe. I recommend buying them at least 3 days in advance, and if they ripen up before you need them, then just stick them in the fridge.
Guacamole Dip
Servings: 4 to 6
4 ripe Haas avocados, peeled and cubed
Juice from 1 lime
1 ripe tomato, cored, seeded, and chopped
1/2 red onion, finely chopped
1-2 jalapeños, finely chopped
1 garlic clove, finely chopped
1/4 cup cilantro, chopped
Salt
Pepper
In a medium bowl, mash the avocado with a fork. Add the lime juice and toss to coat. Stir in the tomatoes, onion, jalapeño, garlic, and cilantro. Season with salt and pepper to taste. Serve with tortilla chips.
