Pumpkin Spice Latte


Although summer may not officially be over, I can't help but get excited about fall. After Labor Day, I start dreaming of all the pumpkin, butternut squash, soups, and stew recipes I want to make. I must not be the only one, because I've started to see pumpkin spice lattes pop up at all of my favorite coffee places. I came up with this recipe so that I could enjoy a pumpkin spice latte whenever I wanted (like a couple of times a day), and with the extra bonus of saving money. 

Pumpkin Spice Latte

Pumpkin spice simple syrup:
1 cup water
1 cup granulated sugar
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
1/8 tsp. ground allspice
1/8 tsp. ground cloves
1/8 tsp. ground nutmeg

Brewed espresso/coffee
Steamed milk (or heated milk)
Whipped cream (optional)

To prepare the simple syrup, in a small saucepan, combine the sugar and water over medium heat until the sugar dissolves, stirring occasionally. Stir in the spices and cook on low for 5 minutes. 

To prepare the latte, add the desired amount of brewed espresso and steamed milk to a coffee cup. Stir in 1-2 tbsp. of pumpkin spice simple syrup or more to taste. Top with whipped cream and a sprinkle of cinnamon. (You can also add a drizzle of caramel syrup if you really want to be decadent.)

Store the simple syrup in an air-tight container in the refrigerator.
