Mixed Green Salad with Balsamic Vinaigrette

Sometimes all I really need for lunch or dinner is a salad. But I'm not talking about the garden salad kind with iceberg lettuce, a few tomatoes, and ranch dressing.  I'm talking about a real salad made with mixed greens, piled high with plums, blueberries, candied walnuts, and goat cheese tossed with a tangy balsamic vinaigrette. Sometimes I like to add grilled chicken or mix up the fruits, and if I have extra time I might throw in garlic, shallots, and herbs to the dressing. This is my quick and easy version of the dressing and the one that I use most often. 

Mixed Green Salad with Balsamic Vinaigrette 

Basic Balsamic Vinaigrette:
2 tsp. dijon mustard
1/4 cup balsamic vinegar
2/3 cup extra-virgin olive oil
1/4 tsp. salt
1/8 tsp. pepper

Mixed salad greens and/or baby spinach
Plums, thinly sliced
Candied walnuts 
Goat cheese

In a small bowl, whisk the ingredients for the dressing together until well emulsified. Add extra oil if you like your dressing thinner and adjust the seasonings to taste. (Alternatively, you can add the ingredients to a mason jar and shake to mix.)

Mix the ingredients for the salad together and toss with dressing just before serving.
