Buffalo Chicken Dip

The one thing that football fans usually have in common is that they love buffalo chicken dip. And there is no better time for buffalo chicken dip than Monday night football, especially when it's the Redskins (Go Skins!) vs. the Cowboys. We took this to a few football parties last year and it was a huge hit! Spicy, cheesy, and full of really can't go wrong with this yummy dip!

Buffalo Chicken Dip

1 tbsp. extra-virgin olive oil
1/3 cup yellow onion, finely chopped
1/3 cup celery, finely chopped
2 1/2 cups shredded chicken, such as rotisserie chicken
8 oz. cream cheese, softened
1/2 cup blue cheese or ranch dressing
1/3 cup Franks Red Hot sauce (or 1/2 cup if you like it spicy)
1 cup cheddar cheese, shredded

Preheat the oven to 350°. In a medium sized skillet, heat the oil over medium heat. Add the onions and celery, and sauté until softened, about 5 minutes. Add the shredded chicken and remove from heat. 

In a medium bowl, mix the cream cheese, dressing, and hot sauce together. Add the mixture to the skillet with the chicken and stir until combined. Transfer to a pie plate or 8 x 8 baking dish and top with shredded cheese. Bake for 20 minutes or until hot and bubbly. Serve with tortilla chips and celery sticks.
