S'mores Brownies


I don't know why but I have had a major craving for s'mores lately. Maybe because it is starting to feel like the end of summer and I have yet to go camping and make s'mores over the open campfire. I've made s'mores in the microwave before (when very desperate) but I was looking for something more. Then I came across these brownies. Warning: these are not diet brownies. These are messy, gooey, chocolatey, sugary brownies, and I enjoyed every bite. Yes, I will admit it, I made these using a boxed brownie mix, but hey, everyone needs a shortcut once in awhile. If you're looking for a way to dress up boxed brownies or you're just craving s'mores like me, then these brownies are for you.

S'mores Brownies

Crust:
3 cups graham cracker crumbs
1/4 cup granulated sugar
1/4 tsp. salt
3/4 cup unsalted butter, melted

Brownies:
1 box favorite brownie mix (I used milk chocolate) or homemade
1 bag mini marshmallows
Graham crackers, broken into large pieces
Chocolate, melted, for drizzling

Preheat the oven to 350°. Line a 9 x 13 baking pan with aluminum foil. Lightly grease the foil. In a medium bowl, mix together the graham cracker crumbs, sugar, and salt. Add the melted butter and mix well with a fork. Press the graham cracker mixture into an even layer in the baking pan. Bake for 15 minutes or until golden brown.

Prepare the brownie mix according to the package directions. Add the prepared brownie mix on top of the baked crust and spread into an even layer. Bake according to the package directions. 

After baking, immediately add the marshmallows on top and preheat the broiler. Broil just until the marshmallows begin to brown (watch this carefully because it happens very fast).

Add the large graham cracker pieces on top and drizzle with melted chocolate. Let the brownies cool to room temperature in the pan, at least 2 hours. Remove from the pan using the aluminum foil and cut into squares. Store in an air-tight container.
