My husband and I love mint and we love coffee, so it is only natural that we love mint in our coffee. I became addicted to mint white chocolate mochas from Starbucks but soon realized that my addiction was going to break the bank. So I came up with this super easy (and cheap!) recipe for mint simple syrup that you can add to your own mochas or coffee at home. And you can play with the ratios of sugar to water if you like your syrup thicker; and adjust the amount of mint to taste. My husband's new favorite drink is two shots of espresso over ice with two tablespoons of mint simple syrup.
Mint Simple Syrup
1 cup granulated sugar
1 cup water
1 tsp. peppermint extract (or to taste)
In a small saucepan, combine the sugar and water over medium heat until the sugar dissolves, stirring occasionally. Stir in the peppermint extract and remove from heat. Let the syrup cool and transfer to a storage container.
